Lut Gee Hoong Shiu Ju Yook
pork with chestnuts
Ingredients:
750 gr pork belly (lean)
650ml hot water
125 gr dried chestnuts
3 cloves of garlic
1 tsp salt
1 tbsp Shaoxing rice wine
1 tbsp light soy sauce
2 tsp cornflour + 2 tbsp water
1 spring onion
2 tbsp oil
hot water
Preparation:
Soak the chestnuts in hot water for 30 minutes. Then drain and repeat. Finely chop the garlic and mix it with the salt. Finely chop the spring onion. Cut the meat into cubes. Mix the garlic with the soy sauce, the rice wine and the meat and let it marinate for at least 60 minutes.
Heat in a pan the oil and add the meat and stir fry for 3 minutes until it turns brown. Then add the chestnuts and mix well. Then add the water and let it simmer and covered for 40 minutes.
Then add the cornflour solution and stir until the sauce has thickened and evaporated to 250 ml. Then sprinkle the spring onion over it and serve.
