Lu Rou Fan - 卤肉饭
braised pork belly with mushrooms and egg

450 gr pork belly
6 cloves of garlic
1 tbsp palm sugar
2 tbsp light soy sauce
1 tbsp dark soy sauce
2 tbsp Shaoxing rice wine
1/2 tsp five-spice powder (see recipe)
1/2 tsp pepper (white)
5 shiitake mushrooms
4 eggs, hard boiled
150 g bawang goreng

Cut the meat into thin strips. Finely chop the garlic. Cut the shiitkae into slices.
Heat a wok and add the meat and fry until the fat is released. Then add the garlic and palm sugar and fry for 1 minute and until the palm sugar has melted.
Then add the two soy sauces, the rice wine, the pepper, the five spice powder, the eggs, the shiitake and half of the bawang goreng and mix well.
Then add water until the meat is covered. Then bring it to a boil and cook over low heat and covered for 1 hour until the meat is tender.
Serve it with white rice and blanched vegetables. Sprinkle over the remaining bawang goreng and serve.
