Panggang Ikan Bumbu (Minangkabau)
spiced fish with sambal


Bahan-bahan:
ingredients:
1 ikan bawal, otherwise haddock
1 tbsp ketumbar
3 cloves garlic
1 tsp pepper
1/2 tsp salt
3 tamarind, dissolved
banana leaf
oil

Bahan sambal:
ingredients:
4 shallots
2 cloves garlic
10 red rawits
50 g peanuts
4 belimbing wuluh

Cara membuat:
preparation:
Pound or grind the ketumbar, garlic, pepper and salt into a paste and mix it with the asam water and 1 tbsp oil. Rub the fish with this and let it rest for at least 10 minutes.
Place the spiced fish on a banana leaf and then grill it over a charcoal fire until done. Serve the fish with the sambal.

sambal:
Chop the belimbing finely. Pound or grind the peanuts finely. Roast the shallots, garlic and rawits until they are soft and puree it. Then mix it with the belimbing and peanuts.
