Bubur Ase (Jakarta)
Bubur with stewed beef and vegetables


Bahan bubur ase:
Ingredients:
1000 ml rice, soaked for 12 hours
1500 ml water
3 salam leaves
2 serai/sereh/lemongrass
1/4 tsp salt
300 ml coconut milk (from 1/2 coconut)
300 ml chicken stock

Cara membuat:
Preparation:
First, drain the rice well. Heat the water and rice in a pan and cook until tender. Then add the salam, serai, salt, coconut milk, and stock and cook until soft and the bubur thickens. Set aside.

Bahan semur Betawi bubur ase:
Ingredients:
300 g brisket
1000 ml water
3 tbsp kecap manis
1/2 tsp salt
1 clove
Oil

Haluskan:
bumbu:
5 shallots
5 cloves garlic
1 tsp roasted ketumbar 
1/2 tsp pepper
1/4 tsp nutmeg
1 red chili pepper
1 cm jahe

Cara membuat:
Preparation:
Heat the water and meat in a pan and cook until tender. Remove the meat and cut it into pieces. Reserve the broth. Peel the potatoes and cut them into 2.5 x 2.5 cm cubes. Heat oil in a pan and fry the potatoes until tender and golden brown, then set aside. Pound or grind the bumbu ingredients into a paste. Heat 2 tbsp of oil in a pan and sauté the bumbu for 5 minutes. Then add the stock, kecap, salt, and cloves and mix well. Then add the meat and potatoes and cook until tender.

Bahan asinan Betawi:
Ingredients:
1 carrot
1/4 lobak/daikon
1 cucumber
1/4 small cabbage
1 tsp vinegar
2 tsp palm sugar
1/2 tsp salt

Cara membuat:
Preparation:
Grate the carrot and lobak lengthwise. Cut the cucumber in half and remove the seeds, then grate it lengthwise. Finely chop the cabbage.
Mix the vegetables well. Then mix in the vinegar, palm sugar, and salt and stir until smooth. Let it steep for at least 30 minutes before serving.

Bawang goreng
Finely chopped Kucai/Chinese chives
Finely chopped spring onion
Emping
Red kerupuk

Penyajian:
Serve:
Place the bubur on a serving dish and spoon the semur over it. Sprinkle the pelengkap over it and serve with the asinan.
