Pais Telur Asin
steamed spiced salted egg


Bahan-bahan:
ingredients:
8 salted duck eggs, uncooked
1 chicken egg, beaten
9 shallots
8 red lomboks
2 green tomatoes
4 spring onions
4 salam leaves
4 serai/sereh/lemongrass, white part
1 tsp pepper
1/2 tsp palm sugar
200 ml coconut milk (from 1/2 coconut)
8 sprigs of kemangi
banana leaf

Cara membuat:
Preparation:
Cut the shallots, lomboks, tomatoes and spring onion into thin slices. Halve the salam leaves and the serai.
Heat the coconut milk in a pan together with the pepper and palm sugar and bring to the boil. Then add the egg and stir until it becomes a homogeneous mass.
Take 2 banana leaves each time and fold them like a container. Place 1/8 of the lomboks, shallots, tomato, spring onion, salam, serai and kemangi in each container.
Place a duck egg and 3 tablespoons of coconut milk on top and wrap it with a banana leaf. Then steam the parcels for 40 minutes until done and serve.
