Yum Kai Giew Salmon
spicy salad with salmon and egg (2 pp)

Ingredients:

2 eggs
50 gr smoked salmon
2 rawits (small chilies)
1 tbsp nam pla (fish sauce)
1 tsp palmsugar
1 tbsp lime juice
1/2 spring onion
1 tbsp coriander leaves, chopped
1/2 tsp pepper
1/4 tsp salt
2 cherry tomatoes
6 mint leaves
1 tbsp oil

Preperation/method:
Cut the spring onion, the rawits and the salmon fine. Cut the tomatoes into thin parts. Whip the eggs with the pepper and the salt. Heat in a prying pan the oil and add the eggs and bake a thin omelette. Roll the omelette up and slice it into thin strips. Mix all ingredients together to form the salad.
