Binakol na Manok
chicken soup with papaya and spinach
Ingredients:
1 heavy chicken
1 onion
4 cloves of garlic
5 cm jahe/ginger
2 serai/sereh/lemongrass
1 tbsp fish sauce
800 ml coconut water
200 g young grated coconut
1 green papaya
1 bunch of wild spinach
1 tsp salt
1 tsp pepper
1 tbsp oil
Preparation:
Cut the chicken into pieces. Cut the onion, garlic and jahe into thin slices. Crush the white part of the serai. Peel the papaya and cut it into cubes.
Heat the oil in a pan and fry the onion, garlic and jahe and fry until soft. Then add the chicken and fry until it changes color. Then add the fish sauce and fry for 1 minute.
Then add the coconut water and bring to the boil. Add the serai and continue cooking on low heat and covered for 25 minutes. Then add the papaya and continue cooking for 5 minutes. Then add the grated coconut, salt and pepper and mix well. Then add the spinach and mix well. Serve.
