Soto Ayam Kuah Kuning Cirebon
chicken soup from cirebon

500 gr chicken thighs
200 grams of cabbage
1500 ml of water
3 potatoes
100 gr soun
125 gr bean sprouts
2 spring onion
2 serai/sereh/lemongrass
3 salam leaf
5 jeruk purut leaves
3 cm jahe
4 cm lengkuas/laos/galangal
2 tbsp kecap manis
1/2 lime, juice
3 tbsp oil

6 cloves of garlic
4 kemiri nuts, toasted
4 cm kunyit
1 tsp pepper
1 tsp salt

3 tbsp bawang goreng

Cara membuat:
Cut the potatoes into cubes. Finely chop the spring onion. Cut the cabbage into thin strips. Soak the soun in hot water. Pound or grind the ingredients for the bumbu into a paste.
Heat the water in a pan and cook the chicken. Scoop it out of the pan and pull it apart (shred it). Heat the oil in a pan and fry the bumbu together with the jahe, the laos, the serai, the salam and the jeruk purut for 5 minutes. Then add it to the stock together with the potatoes and cook until the potatoes are done.
Then add the spring onion, cabbage, bean sprouts, chicken, kecap and lime juice and bring to the boil.
Scoop some soun into a bowl and spoon the soup over it and sprinkle the bawang goreng on top and serve.
