Luó Bó Dùn Níu Ròu - 萝卜炖牛肉
stewed beef with daikon


Ingredients:
900 g shank/brisket
7 cm jahe
2 star anise
3 salam leaves
1 cassia cinnamon stick
1 tsp Sichuan peppercorns
100 g tomatoes, chopped
1 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp oyster sauce
1 tbsp Shaoxing rice wine
1 tsp palm sugar
1/4 tsp salt
1/4 tsp white pepper
450 g daikon
11 cloves garlic
1 spring onion
1 tbsp oil
water

Preparation:
Cut the meat into pieces. Cut the jahe julienne. Cut the daikon into cubes. Finely chop the spring onion. Fill a pan with water and add the meat and cook for a few minutes and skim the foam from the pan. Then drain and set aside.
Heat the oil in a pan and fry the jahe, star anise, salam, cinnamon and peppercorns on low heat for 3 minutes. Then add the meat and fry for 1 minute.
Then add the tomatoes, soy sauces, oyster sauce, rice wine, palm sugar, salt and white pepper and mix well. Then add 350 ml hot water and bring to the boil.
Then simmer on low heat and covered for 90 minutes until the meat is done/tender. Then mix in the daikon and garlic and cook covered for 15 minutes until the daikon is soft to bite. Sprinkle the spring onion over it and serve.
